My famaly wasn't really into Cauliflower. They wouldn't been very pleased when they know its for lunch. Once this recipe idea hit my mind, and thought why not try it; and of course it was a success. The sauce flavouring, with the melted cheese made a huge difference. Since then, they ask for it with the same way.

Ingredients: 

1 Whole Cauliflower Floret / 1 Tsp Cumin seeds  / 3 Tbsp Natural Ghee  / 1 Tsp Salt / 1/2 Tsp Pepper / Fresh Thyme strings  / 2 Cups Whole Milk / 1 Cup Broth / 1 Tbsp Cornstarch  / Pinch of White pepper / Pinch of Nutmeg  / 1 Tsp Salt  / 1/2 Tsp Ground cardemom  / Shredded Mozzarella  / Fresh or dried Parsley  for garnish 

Method :

Preheat the oven to 200*c

Cut each florets from the stem letting the stem short in length. Wash them under running water, and drain.

In an oven pan over medium heat, fry the florets with ghee and cumin. Add the thyme and lightly season. 

Prepare a simply Bachamel sauce, I called it "Fake Bachamel," by adding the cornstarch to the milk, stir well to dissolve the cornstarch, then add the broth and the white pepper, nutmeg, and cardamom.

Pour the Bachamel over the Cauliflower, sprinkle around the shredded mozzarella, and insert in to a preheated oven until golden brown.

Serve hot with white rice or baladi bread besides green salad.
