This nice thing about this cheesecake, is that it serves multi taste. Strawberry lovers will find a slice, kiwi lovers will find theirs, as meringues and plums will also do. You can change the fruit type to you desired taste, to please your family and friends.

Crust Ingredients ;

420g Plain Biscuit , 85g melted butter.

Cheese Ingredients; 

800g cream cheese,  1/2 cup fine sugar or natural honey , 2 eggs,  1 Tbsp cornstarch , 1 cup whipping cream , 1 tsp vanilla.

Topping ;

Strawberries, Plums, Meringue, Kiwis 

Method; 

Preheat the oven to 120*c

To make the crust, crush the Biscuit until you get fine crumbs. Add the butter to the biscuit and mix well using your finger tips to allow the biscuit to absorb the butter. The mixture should hold iis shape by squeezing it into your hands to form a light ball that falls apart when touched slightly, put the mixture into a cake pan or a Pyrex oven pan and pat down until leveled. 

In a bowl, put the cream cheese and sugar and beat until well mixted. Add the eggs one at a time, beating until thoroughly combined after each one. scrape the sides of the bowl after each beat to make sure everything is incorporated. Sift the cornstarch into the mixture and beat. Add the whipping cream and vanilla and mix until combined. 

Pour the mixture over the crust and bake in the preheated oven for 1 hour and 20 minutes until the middle is slightly jiggly. Remove from the oven and let cool for 1 hour. Refrigerate overnight.  Unmould the cheesecake by turning it upside-down on a plate or board, then upright again.

For the topping, first arrange the strawberries by drawing the ouline of a triangle, then filling in the rest. Then visually divide the pan into 3 parts, first part fill it with plums. second part fill it with Meringues, and 3rd part fill it with kiwi pieces. You can also use your prefered fruits and arrange them as you desire, or spreading it casually on the top. Dust with confectioner sugar before serving.
