Tiramisu
Tiramisu
Tiramisu has several ways to make. I find this to be the easiest way, but choose your eggs from a trusted place, and preferably organic.
Ingredients;
6 Large eggs separated in big glass bowls - 500 g Mascarpone or cream cheese - 100 g sugar or 1 cup natural honey - 300 g Lady fingers (Savoiardi) - 500 ml strong coffee - Cocoa powder.
Method;
Prepare the coffee and let aside to warm. Using a hand mixer, beat the egg yolks until creamy and frothy, then add the Mascarpone and lightly mix to combine.Beat the egg whites until it doubles in size, and forms stiff peaks with no left liquid in the mixture. Add the whites to the cheese mixture, and lightly fold using a spatula, making sure not to over mix or loose the air volume in the mixture. Make sure there are no lumps in the mixture. Carefully soften the fingers in the warm coffee, trying not to break them, and arrange them in the serving dish rough side facing down, (preferably a glass dish to show the biscuit and the cheese from the sides). After finishing a layer of biscuit, add a cheese layer. Then a layer of soaked biscuit, then cheese, and repeat until you reach the end of the dish finishing with a cheese layer. Finsh with a generous dust of cocoa powder, and set in the fridge to completely chill before serving (preferably overnight so the biscuits and cheese sets up together.) If desire, serve with some strawberries, and enjoy.
