Aubergine Ingredients:
4-5 Grilled Aubergine / 1 Tsp Salt / 1/2 Tsp Pepper / 1/2 Tsp Ground Cumin / 1 Tsp Smoked Paprika / 4 Garlic cloves / 1 Jalapeño / Juice of 2 Lemons / 2 -3 Tbsp Roughly cut Parsley.
For Garnish:
Roughly Cut Parsley / Small Diced Tomatoes, or 1 Red Jalapeño pepper / Pine nuts lightly fried in olive oil.
Method:
Mash the aubergine after removing the skin, season and add the spices, then the crushed garlic and Jalapeño. Add on the parsley followed by the lemon juice. Mix well, and garnish with parsley, tomato, and the pine nuts.
Serve immediately with bread besides your meal.
