Shank Ingredients :

1 Tied Meat Shank  /  5 Tbsp Ghee  /  5 Minced Onions  /  1 Tbsp minced Garlic  /  2 Rosemary sticks  /  Couple sticks of fresh thyme  /  Couple Bay leaves  /  1 Cinnamon stick  /  3 Dried Lemons  /  1 Jalapeños  /  1 Tsp Cumin seeds  /  1 Tsp Ground Cardamom  /  1/2 Tsp Nutmeg  /  1 Tsp Turmeric  /  1 Tsp Galangal  /  5 Carrots cut into wide slices  /   5 Sweet Potatoes cut into wide slices  /  1 Tbsp Salt  /  1 Tsp Pepper  /  1/2 litre Tomato Sauce or puree  /  1 litre Broth.

Freekeh Ingredients :

3 Tbsp fresh ghee  /  2 Cups Freekeh soaked for 2 hours  /  1 Big Minced Onions  /  4 Mastic Cloves  /   Pinch of Nutmeg 1 Tsp Salt  /  1/2 Tsp Pepper  /  1 Tsp 7 Syrian Spices  /  1/4 Tsp Ground Cardamom  /  A Small Handful of Dried Apricots  /  A Small Handful of Prunes  /  2 Cups boiling water. 

For Garnish :

Fried Almonds.

Shank Method :

Preheat the oven to 200*c

In a big rectangular pan over high heat, put the onions with all the spices and flavourings, and stir for a minute  to release its flavours. Add on the Sweet Potatoes and the carrots, stir and empty a space in the middle to place the shank. Pour the tomatoe puree followed by the broth, cover and insert into a preheated oven. 

Let sit in the oven for 3 hours stirring the other side every hour.

 Freekeh Method :

In a medium saucepan over medium heat, add the onions to the ghee with the mastic, bay, and nutmeg, and stir until the onions are translucent. Add on the cardamom and 7 spices along with the dried fruit. Give it a quick stir, then add the freekeh. Stir to combine, and season. Put the boiling water and cover. Bring to a boil, and when you see bubbles just obove the freekeh, keep covered and simmer over low heat. After 15 minutes check the freekeh to soft and tender. If not give it another 10 minutes. 

For Serving :

Lightly fry the almonds in ghee until light golden.

In an oval or rectangular serving dish, carefully place the shank in the center. Surround it with the freekeh, and garnish with the fried almonds pouring even the extra ghee, cause it has all the almond flavours.

Serve hot as a main dish to enjoy with your guests and family.
