Its a tradition popular Indian Dessert called "Gajar Ka Halwa" usually eaten during festivals. "Gajar" means carrots and "Halwa" means dessert. At first, the idea of using carrots as a dessert was weird to me, but I was curious to try it, because Its a simple combination of carrots, milk, and nuts. And was happy I did. It turned out so rich in taste, creamy, and full of nuts, just my style of desert. If you think about it, its very similar to Um Aly.

For this recipe you will need;

4-5 cups grated carrots (red or orange carrots) - 2 Cups Milk - 1/2 Cup Honey, sugar, or natural sweetener - 3 Tbsp Ghee - 1/4 Tsp Cardamom powder - 1/ 2 Cup ot Almond - 1/2 Cup of Pistachios  - 1/2 Cup of Hazelnuts - 1/2 Cup of Raisins  - A Pinch of saffron threads  - Cashews for Garnish.

Method;

Start by soaking the saffron threads in a 2 tbsp milk and set aside. Roughly cut all the nuts. In a pan over medium, low heat, add the ghee with the grated carrots and fry for about 4 minutes, eventually you will smell the carrots. Add the milk and keep stirring untill the mixture thickens, but still has liquid in it. Then add all the chopped nuts and continue to stir untill all the milk has fully evaporated. Add the soaked saffron, and the Cardamom and mix well; then add the honey/sugar and stir well to combine. Pour the mixture in the serving plates, garnish with Cashews or any remained chopped nuts.
