Courgettes are some how mild in taste, that way we usually get board from easily. I have done several Courgettes recipes to encourage ourselves and our family to regularly eat this nutritious vegetable. This recipe is a very close version to the original one, with little additions i made to enhance the taste.

Ingredients: 

3 Tbsp Natural Ghee  / 2 Big Red Onions, minced / 1 Tsp Cumin seeds  / 1 Bunch Fresh Coriander  / A Handful of garlic  / 1 Kilo Courgettes  / 1 Spring of Fresh Mint / 1 Litre Tomato sauce  / 1 Tbsp Tomato paste  / 1 Tbsp Red or White vinegar  / 1 Cup Broth  / 1 Tsp Salt / 1/2 Tsp Pepper.

Spices :

1 Tbsp Groung Coriander  / 1 Tsp 7 Syrian Spices  / 1/2 Tsp Ground Cardemom  / 1/4 Tsp Ground Cloves / 1 Tsp Dried Basil  / 1 Tbsp Dried Mint / Pinch of Nutmeg .

For Garnish :

A sprinkle of dried mint.

Method: 

In a medium pan over medium heat, add the cumin and onions to the ghee and stir untill the onions turns light red. 

Finely slice the fresh coriander, and mashe in a mortar with the garlic until it turns watery and smooth. 

Add the coriander mixture to the onions and lightly mix. Put all the spices, and add the Courgettes and stir well.

Dissolve the tomato paste in the tomato sauce, add it to the Courgettes and season. Add the vinegar followed by broth. Cover and simmer over low heat until the Courgettes start to  softens but not too soft so it doesn't break. Test it by eating one.

Transfer the Courgettes to a serving dish, garnish with dried mint, and serve with rice or baladi bread.
