Full of vitamins, Freekeh can be a healthy substitute for rice. Eaten besides vegetables, or beside any protein, or even use it as stuffing for chicken or pigeons.
Ingredients:
2 Tbsp Ghee - 2 Star Anis - 1 Tsp Cumin seeds - Bay leave - 2 Onions finely diced - 1 Jalapeño - 2 Cups Freekeh soaked for 2 hours - Spring of fresh thyme - Rosemary leaves from 2 sticks - 1/4 Cup mint leaves - 8 Garlic cloves - 1/4 Tsp gound cardamom - 1 Tsp Dried coriander - 1 Tsp Syrian 7 spices - Small handful prunes - Small handful apricot - 1 Tsp Salt - 1/2 Tsp black pepper - 2 1/2 Cup hot broth
Method :
Wash the Freekeh very good and soak for 2 hours, then drain.
In a pan over medium heat, put the ghee and add the anis, bay, and cumin. stir for seconds to release its aroma, then add the onions with the mint, rosemary, and thyme. Stire until the onions turns translucent, then add the garlic, followed by the herbs. Add the Freekeh with the prunes and apricots, season, stir, then add the broth and cover. Bring to a boil, and simmer over low heat until the Freekeh has turned tender, about 20 minutes.
Serve the Freekeh in a serving dish. Lightly fry the almonds and quickly pour them over the hot Freekeh.
Serve hot beside your main meal, and you can enjoy it with soup too.
