Just like "Kahk," "Ghoryeba" is mostly done and available in the pastry shops during the after Ramadan Eid holidays "Eid El Fitr." It's a three ingredient cookies that is easy to combine, but needs to stay cold during the whole making process. It is really an enjoyment making it and understanding the dough. You will be amazed once you finish it. Watch the video to get the whole tricks.

You will need :

500 g All purpose flour

100 g Powdered sugar 

300 g Natural cow ghee, well chilled in the fridge not the freezer 

For Garnish: 

Pistachios, and/or blanched almonds.

Method: 

Using the stand mixer with a flat beater, or a hand mixer with a wire beater; add the flour, and sugar and lightly mix with a spoon. Add the cooled ghee and start the mixer on low speed so the flour doesn't fly around. Increase the speed to medium, and keep mixing for about 4 minutes. Stop the mixer andusing a spoon stir the dough well, then start mixing it again for a constant 10 minutes (set the timer) until the dough turnes so smooth. Wrap the dough with cling film and keep in the fridge for an hour to cool. The dough will be stiff, Place it on a clean working surface like granite or marble to help it stays cold. Quickly start leaning the dough, you dont want it to warm up cause it will start sticking in your hands and you won't be able to form it. Start forming a small scale of a lemon size ball and place it on an oven baking tray. In the middle of the process if it started to stick in your hands, transfer the dough back in the fridge for 20-30 minutes, lean it like you did before, and form the balls. After finishing all the balls, gently push down the pistachios or almonds on the top and reform the shape for a final touch. Return the tray back to fridge for at least an hour to well cool.

Preheat the Oven to 140*c befor placing the tray with 15 minutes 

Place the tray from the fridge to the oven right away, and bake for about 16-20 minutes with fan on until it turns light golden. Let cool before serving, and enjoy a smooth, silky Ghorayba.
