Ma'amoul
Ma'amoul or date cookies. Is traditional Middle Eastern recipe. Unlike other cookies, Ma''amoul's dough is different. The dough consists mainly of semolina, and very little white flour.
Dough Ingredients:
500 g Semolina - 75 g Plain flour - 250 g Butter (soft at room temp) - 4 Tbsp Whole milk - 2 Tbsp Rose water - Pinch of salt
Filling Ingredients:
300 g Ajwa (or chopped dates) - 1/2 Tsp Cinnamon - 1/4 Nutmeg - 1/2 Tsp All spices - 1/2 Tsp Ground cardamom - 1 Tsp Rose water - Pinch of salt.
Method :
Preheat the oven to 200*c, and place the oven rack in the middle shelf.
In a food processor, mix all the dough Ingredients except for the milk and rose water until well combined. Then add the milk and the rose water and mix again until the dough starts forming a ball. Wrap it ina cling film and chill in the fridge for an hour.
Meanwhile, prepare the Ajwa filling by mixing all the Ingredients in the food processor until smooth, shape the Ajwa into olive size balls, and chill in the fridge for 30 minutes.
Lightly press the dough in your hand to shape a ball, then make a small hole in the middle of it and insert the Ajwa and close back the dough (as shown in the video.) If you have Ma'amoul shaper, lightly dust it with flour and press down the ma'amoul to from the drawing shap. If you don't have one, use the lemon squeezer to form a half circle and gently place it on a lined baking tray (as shown in the video.)
Place the tray in the preheated oven, and bake for 20 minutes until lightly golden.
Let cool, Then place the Ma'amouls on a serving dish, and sprinkle with powder sugar.
Serve with tea and enjoy.
