Makes 12 Madeleines.

Ingredients; 

75g Butter - 2 Tbsp Honey - 2 Fresh Rosemary sticks  - 2 Large Eggs -  100g Sugar (If desired) - 50g All Purpose Flour - 1/2 Tsp Baking powder - 50g Ground Almonds - Pinch of Salt.

Method; 

Preheat oven to 200*c

Over low heat, melt the butter, honey, and rosemary, then set aside to cool. In a stand mixer, put the eggs and sugar and set on high speed untill pale and moussey (around 10 minutes). In a seperate bowl, sift the flour, baking powder, almonds, and salt. Add half the melted butter, and half the flour mixture to the beaten eggs and fold gently untill well mixed. Repeat the process with the remaining butter with the flour mixture and the egg mixture. Grease a madeleine backing tray. Fill the tin holes leaving some space for the batter to expand while cooking. Bake for 10-12 minutes untill golden and batter has slightly risen. Let cool completely before serving. Finally, drizzle honey if you didn't add sugar.
