The Cheesecake recipe from "Stiletto" series. I really enjoyed this social action series very much. Though I think the story was quite evil to be true, still their performance was astonishing. The location, their outfits, every single detail was so good. This cheesecake was done several times during the series, you would feel by then you want to eat it.

Crust Ingredients ;

200g crushed digestive biscuit , 1/4cup walnuts , 65g melted butter,

For the cheesecake filling ;

600g cream cheese at room temperature  - 115g Greek yoghurt at room temperature  - 3 large eggs at room temperature - 1/2 cup honey, or 100g fine sugar - 2 tbsp cornstarch - zest of one lemon - 1 tsp vanilla,

For the raspberry sauce :

100g fresh raspberry  - 2tbsp honey  - 1/4 cup water - 1tsp cornstarch 

For the garnish :

Fresh raspberries - Fresh blueberries 

Method :

* Preheat the oven to 180c 

* Adjust the oven rack in the middle 

* Use a 20cm springform pan with parchment paper on the bottom 

* Follow the steps as shown in the video 

* After mixing the biscuit with the butter, compress it in the pan, and bake for 10min,  then let cool.

* Reduce oven temp to 140c 

* Mix the filling ingredients as shown in the video, making sure not to over mix

* Add the filling to the biscuit base 

* Bake for 60 minutes untill edges are lightly golden but the middle is still wobbly when you slowly shake it 

* Turn off the oven and leave the cheesecake to cool inside the oven with the door ajar. 

* Once cooled, chill in the fridge for at least 6 hours, or better overnight 

* In a saucepan over small gentle heat, add the raspberries and honey and gently mix.

* Mix the cornstarch with water, and add it to the raspberries, and stir until thickness.

* Blend the mixture using a hand blender untill smooth, and pour it over the cheesecake 

* Garnish with the fresh berries.
