Rice With Courgettes
Bored from making regular rice every day !? Try this Rice with Courgettes for a change beside your protein dish, and you will still have a balanced meal with carbohydrates, protein, and vegetables.
Ingredients:
3-4 Courgettes, half way sliced / 2 Garlic cloves / 1 Tsp Salt / 1/2 Tsp Pepper / 1/2 Ground cardemom / Pinch if Nutmeg / 3-4 Cup Egyptian White Rice, washed and drained / 1 Tsp 7 Syrian spices / Boiling Water (same amount of cups as rice)
Method:
In a rice pan over medium heat, fry the courgettes with garlic, cardamom, salt and pepper until the courgettes has slightly started to soften. Add the spices to the rice, mix well, and pour over the courgettes. Stir to combine to allow the rice absorbe the flavours.
Add the boiling water, cover, and waite until the rice absorbes the water but still has little water on top. Transfer the pan to a small heat with low flame, and put under the pan a heat distributing cover.
After about 10 minutes, check the softens of the rice, it not ready give it an extra couple of minutes.
Serve hot with your protein, or serve it with minced meat, its so delicious and easy to eat.
