Ingredients: 

1 Kilo strawberry  - Mastic  - 1 cinnamon stick  - 1 Bay leave  - 2 Star anise  - Couple of saffron threads  - Fresh Basil  - 1/2 Cup Natural Honey  or Sugar if desired - Juice of one lemon - 1 Tbsp Chia Seeds - ! Tsp Flax Seeds.

Method :

In a medium size wak set over medium low heat, add the Strawberries followed by all the ingredients except for the lemon juice, chia, and flax seeds, and keep stirring. At first the strawberry will release all its liquid, then the liquid will Start to evaporate, and the texture will thickens. You can test the thickness by moving the spatula across the pan in the middle of the mixture and watch how the mixture comes back together. If it quickly mix back together then its still light in texture, so keep stirring for another couple of minutes. Or if the mixture doesn't meet each side back easily then it has reached the right thickness. Finally, add the lemon juice, chia and flex seeds. Stir for an extra couple of minutes, like 2-3 minutes and turn off the heat. Transfer the mixture to a dish to cool, remove the star anise, cinnamon, bay leave, and basil. Then pour in a glass jar and keep in the fridge.

Enjoy it with your favourite bread for breakfast or dinner. Use it in your desserts, like a filling for a double layer cake, or as a decoration over a cake, or even take a 2 Tbsp and use in the cake batter, or for thumbs nail cookies, with yougart, with strawberry Tiramisu, with trifle, cheesecake topping.
