Strawberry Soup
Sounds wiered I know !! But Its a nice, different way to enjoy strawberry during the season. Its a romantic recipe I found in a French Dinning recipe book I have. When i tried it, it raelly amazed me how tasty it is. And so decided to share it.
Ingredients;
250g Strawberries - Juice of one Lemon - 200g Mascarpone Cheese, Philadilphia Cheese or Cream Cheese.
Method;
Leave some strawberries with its leaves for garnish. In Bowl, put the strawberries and the lemon Juice, and blend using the soup blender. Pour the mixture in the serving bowls, and chill for at least one hour. Put the Cheese in a bowl and beat using an electric hand wire wisk mixer untill firm. Put a Tbsp of cheese on top middle of the strawberry. The Cheese will float because the strawberry has chilled. Chill again for at least one hour, or until serving. Finally, garnish with the whole strawberries, and baby mint leaves. Chill untill serving cause other wise the cheese will sink.
