Summer Tomato Soup

"Gazpacho" that's what it's called ! It's a summer soup or drink originally from south of Spain, known to be particularly used during hot summer days to cool and refresh the body. Its so easy to prepare, you can use it as a refreshing drink for your family and friends.

You Will Only Need :

4 Ripe juicy tomatoes 

1 garlic clove

1 Small shallot 

1 Tsp red vinegar 

2 Tsp Olive oil 

1 Tsp Sugar, or your favorite sweetener 

1/2 Tsp Salt + Pinch of pepper

1 Peeled Cucumber for garnish 

Method :

 Add all the ingredients in the the blender except for the olive oil, add it while running the blender. Pour the mixture through a sieve nd chill before serving. Cut the cucumber to small pieces and gently add them to the top of the soup, and finish garnishing with baby mint leaves.
