Yougart Sauce Minced Beef Courgettes

A different way of cooking courgettes, with yougart sauce the taste and is amazingly different. 

Ingredients: 

2 Tbsp Natural Butter / 1 Tsp Cumin seeds  / 1 Kilo Courgettes, sliced / 500g Minced Meat / Minced Onions / 1 Fresh mint string  / 1 Tsp 7 Syrian Spices / 1/4 Tsp Ground cardemom  / Pinch of Nutmeg / 1 Tsp Salt / 1/2 Tsp Pepper / 340g Yougart  / 2 Tbsp Cornstarch  / 1 Cup Broth or boiling water.

Taqulia :

2 Tbsp Minced Garlic  / 1 Tbsp Ground Coriander.

For Garnish:  

Pine Nuts / Dried Mint

Method: 

In a medium pan over medium heat, add the cumin seeds to the butter, followed by the meat, and stir until browned. Then add the onions, spices followed by the courgettes and fresh mint. Season and well stir.

Meanwhile, prepare the yougart sauce, by disolving the cornstarch well in the yougart, followed by the broth. Cover, and simmer over low heat. 

Prepare the Taqulia in an egg pan. Fry the garlic in the ghee until light golden, then add the coriander, stir for seconds, and pour over the courgettes, and stir to combine.

In the same pan fry the pine nuts, and garnish the top, then sprinkle the dried mint.

Serve hot with rice, or baladi bread.
